In the grasslands below the Rock of Cashel in County Tipperary roam some of the happiest herds of grass-fed cows in Ireland. These undulating pastures were first discovered by the Munster kings and have been nearly sacred ground ever since.
What’s sacred to us is that these fields provide the richest, creamiest grass-fed cow’s milk for our 100% natural Swiss Cheese. We age our gourmet Swiss over 90 days to enhance the delicate nuances that give it its signature sweet, nutty taste.
